Growing up, I remember being fascinated with tomatillos and their delicate paper jacket. As fun as they were to pick and to peel, I never liked eating them! But, when my mom first made salsa verde, I changed my mind. This is THE most delicious Tomatillo Salsa Verde Recipe out there!
We took our kids on a Disney cruise and one of my FAVORITE parts were the fresh Pina Coladas that they offered up to the exhausted parents on board! We ate well the entire trip, never had dessert, but for sure had a few of these tasty beverages. But, they definitely had a ton of sugar in them! I got home from the trip and kept dreaming about them. So, I decided to re-create them in my kitchen using healthy ingredients and trying to get them as low carb as possible. I am so excited to share my incredible gluten-free pizza recipe! I make this for my kids all the time because it is SO easy, and lets face it, many of the gluten free crusts in the stores leave something to be desired. I found the easy solution to that! I have also given some options for vegetarian toppings.
Since we are using tortilla wraps (sandwiched with cream cheese), there is no raw dough going into the oven like with regular pizza – so we cook the vegetables beforehand, thus making the oven step essential only to melt the cheese and warm everything through…and also crisp up those edges. Eton Mess is a traditional English dessert consisting of a mixture of strawberries, broken meringue, and whipped double cream. First mentioned in print in 1893, it is commonly believed to originate from Eton College and is served at the annual cricket match against the pupils of Harrow School.
Sugar-free meringues are a game changer! I decided to showcase them in the classic Eton Mess, where we can enjoy the natural sugars in the strawberries and devour the meringues without guilt.
The meringue batch in the recipe below yields more than is needed for this recipe, so be sure to store the remainder in an airtight container. Truth be told, these scrumptious little pieces of heaven won’t last long in your home anyway as they are the perfect bite-size treat to satisfy your sweet tooth.
The meringues, cream, and prepping of the strawberries can be done in advance and kept in separate containers with the assembly done just prior to serving to avoid the meringues softening. Enjoy! [Read more…]
I grew up eating my dad’s homemade burritos every other weekend (my parents were divorced and we were with my dad every other weekend). His recipe consisted of tortillas, pureed beans, Mexican rice, cheese, sour cream, and jalapeños. Of course, I needed to know how he made his canned pickled jalapeños so crunchy and amazing. He shared his recipe with me and now I am sharing it with you! I only changed one thing, I swapped the sugar for Swerve (a sweetener that does not affect your blood sugar, and that actually tastes good!).

I have done my fair share of canning, both helping my family and trying it on my own. It can be a lot of work if you are water bath sealing them….and when my kids want pickles, they want pickles NOW!
