  • Line an eight-inch or nine-inch square pan with parchment paper.
  • Place the peanut butter, chocolate chips, and coconut oil in a medium saucepan. Warm over low heat until fully melted and smooth.
  • Remove from heat and stir in the vanilla extract.
  • Add the cereal to a large bowl. Pour the warm chocolate mixture over the cereal and stir gently until every piece is coated.
  • Transfer the mixture to the prepared pan and press firmly to create an even layer.
  • Sprinkle the powdered sugar across the top.
  • Chill for at least one hour until the bars are firm.
  • Slice into squares and serve.

Notes

Chef Tips: 

  • If you want cleaner slices, press the mixture very firmly into the pan and chill longer for a solid set.
  • Add half a cup of mini chocolate chips or chopped peanuts for extra texture.
  • If you prefer less sweetness, reduce the powdered sugar by half or skip it completely.
