Avocado & Tomato Salad
You can present this deliciously simple salad as you wish, but it lends itself to be presented beautifully on a flat platter to allow all the elements to visually shine. Lovely on the side of any dish and will go particularly well alongside a bowl of chili con carne to add a fresh Mexican touch!
Chef Tips:
- It is not necessary to slice the avocado, you could also dice it, just be sure to squeeze over the lime juice because the acid will prevent oxidation (the avocado turning black).

Avocado & Tomato Salad
Avocado & Tomato Salad is a refreshing and nutritious dish featuring creamy avocados, juicy tomatoes, and crisp red onions, all tossed in olive oil and lime. Topped with cilantro and a touch of sea salt, this vibrant salad is perfect as a side dish or light main course.

Ingredients
- 1 large avocado sliced
- 1 lime
- 2 ripe tomatoes finely chopped
- ½ red onion ¼ finely chopped, the other ¼ thinly sliced
- 1 TB olive oil plus extra to drizzle olive oil
- Handful cilantro coriander, finely chopped (plus extra whole leaves to garnish)
- Pinch chili flakes
- Sea salt
- Freshly ground black pepper
Instructions
- Peel and slice the avocado. Arrange the pieces on your serving platter.
- Halve the lime and squeeze over the juice from one half.
- Season generously with salt and freshly ground black pepper.
- Combine the chopped tomatoes and the finely chopped red onion.
- Add the tablespoon of olive oil and the juice from the remaining lime half.
- Stir through the chopped cilantro, and season with salt and freshly ground black pepper.
- Spoon the tomato mixture onto the platter, arranging it as attractively as you wish, or simply mix it all together.
- Drizzle over a little more olive oil and finish with the sliced red onion, cilantro leaves, and a scattering of chili flakes.
