There are many familiar, big flavors in this simple white bean salad. It doesn’t need anything else – just be sure that you use a really good-quality olive oil accompanied with a great-quality creamy feta cheese.

Chef Tips:

  • Always slice or chop fresh herbs just before serving. This is especially important with basil which tends to darken once sliced or torn.
  • In case you didn’t know this, neither tomato nor basil should be refrigerated: they must be stored in your pantry at room temperature.

  • Toast the pine nuts in a hot, dry pan over medium-high heat until golden. Set aside.
  • Drain and rinse the beans and place them into a bowl.
  • Add the tomato, lemon zest and juice, olive oil, feta, and most of the sliced basil. Season with salt and freshly ground black pepper, then gently toss to combine.
  • Serve the bean salad with the pine nuts and remaining basil scattered over a large serving platter.
