White Bean Salad
There are many familiar, big flavors in this simple white bean salad. It doesn’t need anything else – just be sure that you use a really good-quality olive oil accompanied with a great-quality creamy feta cheese.
Chef Tips:
- Always slice or chop fresh herbs just before serving. This is especially important with basil which tends to darken once sliced or torn.
- In case you didn’t know this, neither tomato nor basil should be refrigerated: they must be stored in your pantry at room temperature.

- 2 TB pine nuts
- 8.1 oz butter beans drained
- 1 tomato diced
- Finely grated zest and juice of ½ lemon
- Generous drizzle olive oil
- 2.1 oz feta cheese
- Handful fresh basil leaves thinly sliced
- Sea salt
- Freshly ground black pepper
Instructions
- Toast the pine nuts in a hot, dry pan over medium-high heat until golden. Set aside.
- Add the tomato, lemon zest and juice, olive oil, feta, and most of the sliced basil. Season with salt and freshly ground black pepper, then gently toss to combine.
