- 1/4 cup erythritol
- 1/4 teaspoon sea salt
- 4 tablespoons unsalted butter, melted
- For the lemon filling:
- 1/2 cup unsalted grass-fed butter, softened
- 1/2 cup erythritol
- 1/4 cup lemon juice
- 1/4 cup lemon zest
- 2 large eggs
- 1/4 teaspoon vanilla extract
Instructions
- Make the crust: In a small bowl, combine the almond flour, erythritol, and salt. Add the melted butter and mix until well combined. Press the dough into the bottom of a 9x13-inch baking pan.
- Prepare the lemon filling: In a large bowl, beat the softened butter and erythritol together until light and fluffy. Beat in the lemon juice, lemon zest, eggs, and vanilla extract until well combined.
