  • Make the crust: In a small bowl, combine the almond flour, erythritol, and salt. Add the melted butter and mix until well combined. Press the dough into the bottom of a 9x13-inch baking pan.
  • Prepare the lemon filling: In a large bowl, beat the softened butter and erythritol together until light and fluffy. Beat in the lemon juice, lemon zest, eggs, and vanilla extract until well combined.
  • Assemble and bake: Pour the lemon filling over the prepared crust. Bake in a preheated 350°F (175°C) oven for 25-30 minutes, or until the filling is set.
  • Cool and cut: Let the bars cool completely before cutting into squares.
