  • Make the crust: In a small bowl, combine the graham cracker crumbs, melted butter, and salt. Press the mixture into the bottom of a 9-inch springform pan.
  • Prepare the filling: In a large bowl, beat the cream cheese until smooth. Gradually add the Swerve sweeteners, beating until well combined. Beat in the Greek yogurt, egg, vanilla extract, and salt.
  • Assemble and bake: Pour the filling over the prepared crust. Bake in a preheated 350°F (175°C) oven for 50-60 minutes, or until the cheesecake is set around the edges but still slightly jiggly in the center.
  • Cool and refrigerate: Let the cheesecake cool completely on a wire rack before refrigerating for at least 4 hours, or overnight.
  • Serve: Serve chilled, topped with your favorite toppings like fresh berries, whipped cream, or a drizzle of chocolate sauce.
