Grilled BBQ Chicken & Bacon Pizza

- 1 gluten-free pizza crust or 2 gluten-free flatbreads
- 1 cup cooked chicken breast, shredded
- 3 slices cooked bacon, chopped
- ⅓ cup BBQ sauce (look for low sugar or clean ingredient options)
- ½ cup shredded mozzarella cheese
- ¼ cup shredded cheddar cheese or shredded smoked Gouda
- ¼ cup thinly sliced red onion
- 2 Tbsp fresh cilantro, chopped
- 1 Tbsp olive oil
Instructions
- Preheat grill to medium heat.
- Lightly brush the gluten-free crust or flatbread with olive oil on both sides.
- Place the crust directly on the grill and cook for 2 to 3 minutes until lightly crisped. Flip once.
- Remove from the grill and spread BBQ sauce evenly over the top.
- Add shredded chicken, chopped bacon, cheeses, and red onion.
- Return the pizza to the grill, close the lid, and cook for 5 to 7 minutes until the cheese is melted and bubbly.
- Remove from the grill and sprinkle with fresh cilantro.
- Slice and serve warm.
