Preheat grill to medium heat.
Lightly brush the gluten-free crust or flatbread with olive oil on both sides. Place the crust directly on the grill and cook for 2 to 3 minutes until lightly crisped. Flip once.
Remove from the grill and spread BBQ sauce evenly over the top.
Add shredded chicken, chopped bacon, cheeses, and red onion.
Return the pizza to the grill, close the lid, and cook for 5 to 7 minutes until the cheese is melted and bubbly.
Remove from the grill and sprinkle with fresh cilantro.
Chef Tips:
- Pre-crisp the crust - Grilling the crust first helps prevent sogginess and gives you that perfect crispy base.
- Use cooked chicken - Rotisserie or leftover grilled chicken makes this recipe even faster and adds extra flavor.
- Choose a clean BBQ sauce - Look for one with simple ingredients and lower sugar for a healthier option. Or try my homemade bacon and bone broth BBQ sauce.
- Keep toppings balanced - Avoid overloading the pizza so it cooks evenly and the crust stays crisp.
