This cheesy cauliflower bacon bake is a comforting dish that’s perfect for family dinners or special occasions. Rich, creamy, and packed with flavor, it’s a guaranteed crowd-pleaser.
Ingredients
- 32 oz cauliflower florets
- 3.5 oz smoked bacon lardons (we use Butcher Box meat)
- 2 garlic cloves, crushed using a garlic press
- 2.1 oz cream cheese
- 14 oz heavy cream
- 4.2 oz cheddar cheese, grated
- Pinch of ground nutmeg
- Handful parsley (flat-leaf or curly), chopped to garnish
- Sea salt
- Freshly ground black pepper
Instructions
- Bring a large, non-stick saucepan of salted water to the boil.
- Add the cauliflower florets and cook until slightly tender, around 12-15 minutes.
- Drain in a colander and leave to steam off.
- Meanwhile, preheat the oven to 400°F/200°C.
- Place a skillet on medium heat and add the bacon and garlic. Leave to cook for around 5-6 minutes, stirring occasionally. We only want to cook it sufficiently – do not burn the garlic or crisp the bacon.
- Remove the pan from the heat and add the cream cheese, heavy cream, grated cheddar cheese, and a pinch of nutmeg.
- Stir well until the cheese has melted. Season with salt and pepper.
- Add the drained cauliflower into the mix and toss gently to combine.
- Pour everything into a large baking dish 9x 13 and place into the oven for 20-25 minutes.
- Just before serving, sprinkle on the parsley.
