Cheesy Cauliflower Bacon Bake
This is the ultimate holiday or Sunday roast side dish that will have your guests wondering why they thought living ‘low carb’ might be tricky or difficult. Here, I use a seasoned creamy mix, cheddar cheese, bacon, and garlic in the cauliflower bake mix. All these delicious flavors, without a grain or wheat flour in sight!
Chef Tips:
- If you can, opt for a really strong cheddar.
- Do not omit the fresh parsley garnish. It does a great job of balancing the strong garlic flavors.

Cheesy Cauliflower Bacon Bake

Ingredients
- 32 oz cauliflower florets
- 3.5 oz smoked bacon lardons we use Butcher Box meat
- 2 garlic cloves crushed using a garlic press
- 2.1 oz cream cheese
- 14 oz heavy cream
- 4.2 oz cheddar cheese grated
- Pinch of ground nutmeg
- Handful parsley flat-leaf or curly, chopped to garnish
- Sea salt
- Freshly ground black pepper
Instructions
- Bring a large, non-stick saucepan of salted water to the boil.
- Add the cauliflower florets and cook until slightly tender, around 12-15 minutes.
- Drain in a colander and leave to steam off.
- Meanwhile, preheat the oven to 400°F/200°C.
- Place a skillet on medium heat and add the bacon and garlic. Leave to cook for around 5-6 minutes, stirring occasionally. We only want to cook it sufficiently – do not burn the garlic or crisp the bacon.
- Remove the pan from the heat and add the cream cheese, heavy cream, grated cheddar cheese, and a pinch of nutmeg.
- Stir well until the cheese has melted. Season with salt and pepper.
- Add the drained cauliflower into the mix and toss gently to combine.
- Pour everything into a large baking dish 9x 13 and place into the oven for 20-25 minutes.
- Just before serving, sprinkle on the parsley.
