  • Bring a large, non-stick saucepan of salted water to the boil.
  • Add the cauliflower florets and cook until slightly tender, around 12-15 minutes.
  • Drain in a colander and leave to steam off.
  • Meanwhile, preheat the oven to 400°F/200°C.
  • Place a skillet on medium heat and add the bacon and garlic. Leave to cook for around 5-6 minutes, stirring occasionally. We only want to cook it sufficiently – do not burn the garlic or crisp the bacon.
  • Remove the pan from the heat and add the cream cheese, heavy cream, grated cheddar cheese, and a pinch of nutmeg.
  • Stir well until the cheese has melted. Season with salt and pepper.
  • Add the drained cauliflower into the mix and toss gently to combine.
  • Pour everything into a large baking dish 9x 13 and place into the oven for 20-25 minutes.
  • Just before serving, sprinkle on the parsley.
