Healthy Cheesy Onion Hashbrown Casserole

- 1 bag 30 ounces frozen organic shredded hash browns, thawed
- ½ cup chopped onion
- ½ cup diced red bell pepper
- 1 cup shredded cheddar cheese divided
- ½ cup Greek yogurt
- 2 large eggs
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- Sea salt to taste
- Black pepper to taste
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Combine ingredients: In a large bowl, combine the thawed hash browns, onion, red bell pepper, half of the cheddar cheese, Greek yogurt, eggs, oregano, garlic powder, salt, and pepper. Stir until well combined.
- Transfer to baking dish: Pour the mixture into the prepared baking dish. Top with remaining cheddar cheese.
- Bake: Bake for 30-35 minutes or until the casserole is golden brown and set, and the cheese on top is nice and bubbly.
