Chocolate Mini Ganache Bites
Using my fool-proof ganache recipe, I added chili flakes to give them a bit of a heat! What I love the most is that these can be made ahead of time – and can also be frozen after cutting into squares. To defrost, simply leave it out at room temperature for around 1-2 hours. Bonus: they are made with Swerve sweetener, so they are a healthier holiday treat!
Chef Tips:
- Do not allow the cream to boil: you will lose moisture due to natural evaporation and risk burning the cream, which will ruin the flavor.
- Finely chop the chocolate and butter as small as possible: this helps them melt quicker for a smooth and glossy ganache that won’t split.
- Dried chili flakes are widely available in all stores. If you suspect your guests might not welcome the heat kick, reduce the amount slightly – but do not omit it completely, as that would defeat the purpose of this interestingly flavored sweet treat!

Chocolate Mini Ganache Bites
These chocolate mini ganache bites are the perfect combination of rich flavor and silky texture. Easy to make and elegantly bite-sized, they’re an indulgent treat for any occasion.
Ingredients
- 5.3 oz dark chocolate, 85% cocoa, chopped into very small pieces
- 1.8 oz unsalted grass-fed butter, diced into small cubes
- 6.3 oz heavy cream
- 3 TB Swerve confectioners’ sweetener
- 1 tsp vanilla extract
- 1 tsp chili flakes, plus an extra sprinkle to cover
Instructions
- Place the chopped chocolate and diced butter into a medium bowl.
- Grease and line the base and sides of a 6-inch (15-cm) baking dish (like a brownie dish) with baking parchment paper.
- Add the cream, sweetener, vanilla, and chili flakes in a saucepan and warm over medium-high heat. Whisk well to combine and leave to simmer until you see tiny bubbles.
- Once you see tiny bubbles, immediately pour the hot cream mixture into the bowl of chocolate and butter and use a small spatula to mix well until you have a smooth, glossy dark brown mixture, ensuring all the chocolate and butter have melted into the mixture.
- Pour the glossy mixture into the prepared baking dish and sprinkle on another pinch of chili flakes. Allow to cool for 15 minutes, then cover and put into the fridge to set completely.
- When ready to serve, use a sharp knife to cut into 16 equal-sized squares. Serve alongside a cup of coffee and leave your guests guessing about the surprising flavor kick!
