Creamy French Onion Rigatoni
Ingredients
- 12 oz gluten-free rigatoni
- 2 Tbsp extra virgin olive oil
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 Tbsp gluten-free Worcestershire sauce
- 1 tsp Dijon mustard
- 1 cup beef bone broth
- ½ cup chicken bone broth
- ½ cup plain Greek yogurt
- ½ cup cream cheese, softened
- 1 cup shredded Gruyère cheese
- ¼ cup grated Parmesan cheese
- 2 Tbsp chopped fresh parsley
Instructions
- While the rigatoni cooks, heat the olive oil in a large skillet over medium-low heat.
- Add the sliced onions and cook for 25 to 30 minutes, stirring often, until deeply caramelized.
- Stir in the garlic and thyme and cook for 1 minute.
- Add the Worcestershire sauce, Dijon mustard, beef broth, and chicken broth. Simmer for 5 minutes until slightly reduced.
- Lower the heat and stir in the cream cheese until smooth.
- Remove the skillet from the heat and whisk in the Greek yogurt until fully incorporated.
- Stir in the Gruyère and Parmesan until melted and creamy.
- Add the cooked rigatoni and toss to coat. Stir in a little reserved pasta water if needed to loosen the sauce.
- Garnish with fresh parsley and extra Parmesan before serving.
Notes
Chef Tips:
- Low and slow is the secret to perfectly caramelized onions. Don’t rush this step because it’s where the incredible flavor develops.
- Remove the pan from the heat before stirring in the Greek yogurt to prevent it from curdling.
- Freshly grate the Gruyère cheese for the smoothest, creamiest sauce.
- Add sautéed mushrooms, shredded chicken, or spinach to make the dish even heartier.
