Bring a large pot of salted water to a boil and cook the pasta according to the package directions. Reserve 1/2 cup of pasta water before draining. While the rigatoni cooks, heat the olive oil in a large skillet over medium-low heat. Add the sliced onions and cook for 25 to 30 minutes, stirring often, until deeply caramelized. Stir in the garlic and thyme and cook for 1 minute. Add the Worcestershire sauce, Dijon mustard, beef broth, and chicken broth. Simmer for 5 minutes until slightly reduced.
Lower the heat and stir in the cream cheese until smooth.
Remove the skillet from the heat and whisk in the Greek yogurt until fully incorporated. Stir in the Gruyère and Parmesan until melted and creamy.
Add the cooked rigatoni and toss to coat. Stir in a little reserved pasta water if needed to loosen the sauce.
Garnish with fresh parsley and extra Parmesan before serving.
Chef Tips:
- Low and slow is the secret to perfectly caramelized onions. Don't rush this step because it's where the incredible flavor develops.
- Remove the pan from the heat before stirring in the Greek yogurt to prevent it from curdling.
- Freshly grate the Gruyère cheese for the smoothest, creamiest sauce.
- Add sautéed mushrooms, shredded chicken, or spinach to make the dish even heartier.
