Coronation Chicken Salad
This simple Coronation chicken salad is packed with simple flavors! Simply put, you will LOVE IT!
Chef Tips:
- You can use any leaves in this recipe, but I love the mild flavor of lamb’s lettuce. This is also known as “corn salad.” If you cannot source it, use another mild leaf like baby spinach.

Coronation Chicken Salad
Experience a taste of royalty with our Coronation Chicken Salad, where tender chicken, creamy curry dressing, and sweet notes of fruit come together in a dish that's as simple to prepare as it is elegant and flavorful.
Ingredients
- 2 skinless deboned chicken breasts (we use Butcher Box meat)
- 2 TB flaked almonds
- 3.2 oz mayonnaise
- 1 tsp curry powder plus extra pinch for the chicken
- 2 TB dried cranberries around 0.4 oz, chopped very small
- 2 handfuls lamb’s lettuce around 1.8 oz
- Sea salt
- Freshly ground black pepper
Instructions
- Preheat the oven to 425°F (200°C) and line a baking tray with parchment paper.
- Season the chicken breasts with a pinch of curry powder, salt and pepper. Place on the tray and bake in the oven for 20-22 minutes. Remove from the oven and leave to cool completely. Once cooled, chop the chicken into very small pieces.
- Meanwhile, toast the flaked almonds in a non-stick pan over medium heat, around 2-3 minutes. Once golden, remove the nuts from the pan and set aside.
- Combine the mayonnaise with the curry powder and finely chopped cranberries in a bowl.
- When the chopped chicken is ready, stir this in too. Taste the mixture and adjust the seasoning with salt and pepper, if needed.
- Serve the coronation chicken mix over a bed of lamb’s lettuce.
- Sprinkle on the toasted almonds and enjoy!
