Season the chicken breasts with a pinch of curry powder, salt and pepper. Place on the tray and bake in the oven for 20-22 minutes. Remove from the oven and leave to cool completely. Once cooled, chop the chicken into very small pieces.
Meanwhile, toast the flaked almonds in a non-stick pan over medium heat, around 2-3 minutes. Once golden, remove the nuts from the pan and set aside.
Combine the mayonnaise with the curry powder and finely chopped cranberries in a bowl.
When the chopped chicken is ready, stir this in too. Taste the mixture and adjust the seasoning with salt and pepper, if needed.
Serve the coronation chicken mix over a bed of lamb’s lettuce.
