Organ meat is the most nutrient-dense food on the planet. Unfortunately, it isn’t also the tastiest food on the planet. I’m trying every trick in the book to get my kids to eat it. Here is one recipe I came up with. Bacon makes everything taste good, even hidden liver meatballs! My kids love them, and this makes me VERY happy!
Yield: Makes about 100 golf ball-sized meatballs

Looking for a clever way to sneak in more liver to your diet? This is a delicious and easy way to get more of this nutritious organ meat into your menu that your family will love and not even realize is there.
Ingredients
- 3 lbs ground grass-fed beef (we get a lot of our meat from Butcher Box)
- 1 lb liverwurst
- 1 lb grass-fed liver
- 3 sweet onions, chopped
- 1 package pastured bacon, cut into 1″ pieces
- 4 pastured eggs
- 1 bunch parsley
- 6 cloves chopped garlic
- 2 Tbsp sea salt
- 3 Tbsp black pepper
- 3 Tbsp coconut flour
Instructions
- Preheat the oven to 425 F degrees.
- Mix the liver and liverwurst and then add to the beef.
- Fry bacon in a skillet, add onion and cook until bacon is cooked and onions are translucent.
- Pulse bacon, onion, parsley, salt, pepper, and garlic in a food processor until chopped. Add to beef and liver mixture.
- Stir in eggs and coconut flour.
- Form into balls slightly smaller than golf balls. I use this gadget to make the balls uniform; it works great!
- Place on a baking sheet and bake until done (until no longer pink inside, about 30 minutes).
- They freeze very well, so I make them in bulk at a time. Then, I re-heat them in our toaster oven.

Hi Kate! Thanks for posting this great recipe. I’m trying to start eating liver before getting pregnant again, and these meatballs look more appealing than the usual Liver and Onions. Just one question – as I live in Australia, our packaging sizes differ from yours. What does a package of bacon weigh? Thanks, Jasmine
Here is a brand that I love, it’s 12 ounces. Do you have Trader Joes over there? Link to bacon —-> https://www.traderjoes.com/fearless-flyer/article.asp?article_id=584
Other than your local farmer where can you get grass fed (organic) livers? Can you get it in the chain stores like Whole Foods; Traders Joe….?
I have not seen them at Trader Joes, but Whole Foods might have some
Excited to try these! I do have one question. Is it really supposed to be 6 “heads” of garlic?
Nice catch Nicole, no its supposed to be cloves. Thanks for catching that. I will edit the recipe 🙂
What is the difference between liver and liver wurst? Thank you!
Liver is just liver. Most liverwurst varieties are spreadable. Liverwurst usually contains pigs’ or calves’ livers. Other ingredients are meat (notably veal), fat, and spices including ground black pepper, marjoram, allspice, thyme, ground mustard seed, or nutmeg.
How can I skip the liverwurst? I do not have it on hand but have all the flavorings….
Just dub more meat for the liverwurst
Around how many meatballs does this recipe yield? It’s a pretty hefty amount of meat.
