If you love chocolate, nuts, and coffee, then these rich, decadent grain-free brownies are the perfect treat for you. Plus, they’re low carb! Go ahead and indulge a little, you deserve it!
Ingredients
- 2.5 oz walnuts
- 4.2 oz unflavoured coconut oil, melted and cooled slightly
- 3 large eggs
- 5.3 oz almond flour
- 5.3 oz Swerve confectioners’ sweetener
- 0.5 oz instant coffee powder, crushed fine the granules are coarse
Instructions
- Preheat the oven to 375°F.
- Grease and line the base and sides of a 6x6-inch brownie pan with parchment paper. At the same time, line a small baking tray with parchment paper.
- Spread the walnuts out on the small tray and toast in the oven for 5-7 minutes, or until golden. Remove and roughly chop. Set aside, do not turn the oven off.
- Whisk the melted, cooled coconut oil with the eggs in a bowl. In a second bowl, combine the almond flour, sweetener, and coffee granules.
- Pour the liquid mixture into the almond flour mixture and combine well. Mix in three-quarters of the chopped walnuts then tip into the prepared brownie tin. Scatter over the remaining chopped walnuts.
- Bake in the oven for 18-20 minutes, or until a cake tester inserted into the center comes out clean.
- Leave to cool completely before slicing into 16 small, equal-sized squares.
