These little chocolatey brownie delights are a must for those who love a coffee flavor. Walnuts are added for a nice texture and some extra nutrition!

Chef Tips:

  • Once the coconut oil is melted, it must be allowed to cool else it may cook parts of the egg once whisked together.
  • As tempting as it might be, do not slice these into squares too soon. They will crumble. If you wish to enjoy them warm, reheat the cut squares in a warm oven instead.

Ingredients

Instructions

    1. Preheat the oven to 375°F.
    2. Grease and line the base and sides of a 6x6-inch brownie pan with parchment paper. At the same time, line a small baking tray with parchment paper.
    3. Spread the walnuts out on the small tray and toast in the oven for 5-7 minutes, or until golden. Remove and roughly chop. Set aside, do not turn the oven off.
    4. Whisk the melted, cooled coconut oil with the eggs in a bowl. In a second bowl, combine the almond flour, sweetener, and coffee granules.
    5. Pour the liquid mixture into the almond flour mixture and combine well. Mix in three-quarters of the chopped walnuts then tip into the prepared brownie tin. Scatter over the remaining chopped walnuts.
    6. Bake in the oven for 18-20 minutes, or until a cake tester inserted into the center comes out clean.
    7. Leave to cool completely before slicing into 16 small, equal-sized squares.
