Spread the walnuts out on the small tray and toast in the oven for 5-7 minutes, or until golden. Remove and roughly chop. Set aside, do not turn the oven off.
Whisk the melted, cooled coconut oil with the eggs in a bowl. In a second bowl, combine the almond flour, sweetener, and coffee granules.
Pour the liquid mixture into the almond flour mixture and combine well. Mix in three-quarters of the chopped walnuts then tip into the prepared brownie tin. Scatter over the remaining chopped walnuts.
Bake in the oven for 18-20 minutes, or until a cake tester inserted into the center comes out clean.
Leave to cool completely before slicing into 16 small, equal-sized squares.
