Grain-Free Bacon Nuggets
My kids love finger food and they especially love finger food that they can help make! This is a very kid-friendly recipe. They can form the nuggets and roll them in the almond flour. We already make fish nuggets regularly, and one day when we ran out of salmon, I decided to try it with some bacon I had on hand. Brilliant! Bacon nuggets are now one of our regular favorites. I make a huge batch and freeze them.

Grain-Free Bacon Nuggets
Equipment
Ingredients
- 1 package bacon we use bacon from Butcher Box
- 2 pastured eggs
- ⅓ cup + 1 cup almond flour some go in the nuggets, some is the breading
- 1 tsp garlic granules
- Dash paprika
- ⅓ cup shredded raw parmesan
Instructions
- Cook bacon in a skillet, do not overcook it. You want it cooked about 3/4 of the way…not crispy!

- Keep bacon grease in the pan, you will use it again later.

- In a large bowl add bacon, eggs, garlic, paprika, 1/3 cup almond flour, and cheese.

- Mix well.

- Using your hands, form into nugget shapes.
- Roll in the additional almond flour.

- Fry in the skillet with reserved bacon grease, about 2 minutes each side.

- Let cool on a plate with paper towels, to soak up excess grease.

- You can freeze them in a freezer bag.
A kid favorite!

- Serve with BBQ Sauce or Blue Cheese Dressing.
- These disappear super fast so I usually double or triple the batch.

Hi, my name is Kate.
I love food. Real food. We eat all of the things that nursing school taught me were bad for you: butter, eggs, bacon, and raw milk.
I am a Nurse, a Mom, and a Real Food loving blogger. Just trying to save the world.

For the nut allergic, can other flours be substituted pretty equally in this? I can’t WAIT to make these!!
You can sure give it a try. I have not tried it yet. Let me know how they turn out 🙂
Oh my goodness! These sound like the best thing ever! I’ve already convinced 3 co-workers that they need them- not that it took any convincing! 🙂
Awesome! Now convince them to make some and bring them to work 😉
I made them and they were terrific! Better than terrific, even- they’re my new favorite snack! 🙂
Awesome Sarah! Yeah its hard not to eat them all at once!!!
Those nuggets sound so great! I love the idea of freezing them and having them handy for quick meals. Have you ever frozen them before frying? I have one kid who is hyper picky and doesn’t like reheated foods. I am thinking that if I froze them and cooked them off for each meal they would seem fresh to him. Got to try that!
Also, I would love to enter the raffle, is there any way of doing it without giving them a url for my amazon account wish list? I would love to win the books as I am just starting this journey but am not able to give out that info. Is there an alternative?
Thanks!
I think you could certainly freeze them before frying! Give it a try and let me know how they turn out. As for the raffle, contact Kelly from “A Girl Worth Saving” — she set up the entrance form and might know a way around that.
These sound so easy , wonderful and make me “mad” I didn’t think of it first!!!!!
I have never heard of ends and pieces regarding bacon, though, only canned mushrooms!!! Interesting!
Thanks for a wonderful recipe! I’ll be making these up soon.
Merry Christmas and Happy New Year!
Merry Christmas to you too!
