I am a HUGE fan of using my slow cooker (crockpot)! What’s better than putting a meal into one pot, turning it on, and letting it cook itself? I also enjoy the smell of something simmering away for hours! Let me tell you, this recipe smells GOOD! We are fortunate enough to get grass-fed beef from my in-laws who have a cattle farm and our freezer just happens to be filled with roasts right now. So, this means that I make at least one per week. This method of easy slow cooker roast beef is the most common method that I use because its seriously so so easy! You can even make it with a still-frozen roast straight from the freezer!
Ingredients:
- 1 beef roast
- 2 Tbsp onion soup mix — here is my homemade onion soup recipe
- 2 Tbsp apple cider vinegar — we use this kind (it tenderizes the meat, especially useful with grass-fed meats!)
- filtered water
Directions:
- Place your roast in a slow cooker (like this), yes you can use a frozen roast if you don’t have time to thaw one out (pictured below)
- Fill half way with filtered water
- Add in soup mix and vinegar
- Turn on high for one hour, then turn down to low and leave to cook until you can fork it apart. Depending on the meat I have cooked it anywhere from 8-24 hours! Yes 24 hours, it was SO tender! Throw this in the crockpot and leave it cooking away all day while you are at work
