Coconut Snowflakes Candy
Okay, I have to admit that I am a bit obsessed with cute candy molds. I mean, how else can you take one ingredient and make it into a super cute treat?! Especially when it comes to kids in the kitchen! I just want something easy that they think is fun. When my latest mold was purchased I knew exactly what I was going to make….coconut snowflakes! So easy, healthy, and adorable!

Instructions
- Coconut butter separates and the oil settles at the top.
- You need to melt it and stir if you want these to turn outright.
- I melt and mix my coconut butter using hot water in a mixing bowl in the sink. You just want to warm it up enough in the jar so you can stir it together and get an even, creamy consistency.

- Once it’s evenly mixed, just spoon it into the molds.

- Place in the fridge or freezer until set.
- Pop out of molds. Enjoy!

- I store them in the freezer in a plastic bag, and they last several weeks.

Hi, my name is Kate.
I love food. Real food. We eat all of the things that nursing school taught me were bad for you: butter, eggs, bacon, and raw milk.
I am a Nurse, a Mom, and a Real Food loving blogger. Just trying to save the world.

So sweet! Tell me, where did you find your snowflake molds?
Here is the mold I bought: https://amzn.to/1cpTmFN
So pretty, thanks for sharing! Pinning this!
LOVE this – pinned. Thanks Kate!
Do you make or buy your coconut butter? If you make it – how? and if you buy it – where?
I buy it, I linked to the kind I buy in the post. You can make it by blending coconut flakes in a high powered-blender.
Totally skipped over (where to find it)!! I tried making my own. I don’t have a food processor or a vitamix and my ninja was not working out. I finally added some coconut oil and came up with something but it was still pretty “gritty”. It will get used but was not exactly what I was looking for.
What a great idea! Can't wait to try it!
How many flakes can you usually get from 1 jar of coconut butter?
Lots! The molds are pretty small, so I would say you can probably get 60-70 snowflakes, or more
My family isn’t too big on the plain coconut flavor (I DO!) What enhancements has anyone tried? I know peppermint is an option but my husband is “anti-mint” ?
You could try adding some of the caramel stevia drops: https://amzn.to/2ASiqLd
