Getting the Instant Pot on a Black Friday sale was a total game-changer for us! As much as I love to cook, the more kids I have, the more time I am spending in the kitchen cooking. Some days it can be hours of cooking when I am trying to batch cook and freeze. Can you relate?

Well, the handy dandy Instant Pot has reduced that kitchen time significantly. I can now make overnight soaked oats and cook them to perfection in 20 minutes in the morning for a healthy breakfast. I can make healthy gluten-free mac and cheese for my kids for lunch in just 7 minutes!

With the holidays here, I wanted to put together a collection of quick and easy Instant Pot recipes, while you are able to do more important things, like enjoying a cup of homemade eggnog or making holiday ornaments.

  1. I made a different Indian Butter Chicken this week (from My Heart Beets) in my IP and it was delicious! My first ever attempt at a curry and I consider it a success. Paleo too (until I added brown rice)! I’m excited to try your Soaked Steel Cut Oats recipe over the holidays and I foresee some tacos or something around New Years so I will check that out soon too.

    1. Good to know Karissa! I have not tried that one yet, but it’s now on my list! The soaked steel cut oats are amazing! We now add hemp seeds, coconut milk powder, cinnamon, vanilla, butter, and honey. Heavenly! 🙂

  2. Ok…need to know…instant pot..is it the same as slow cooker or pressure cooker in other parts of the world? SA
