Pineapple Coconut Margarita

This pineapple coconut margarita has healthy fats from coconut milk and anti-inflammatory benefits from fresh pineapple. So drink up....in moderation.

Ingredients

Instructions

1. Blend all ingredients (except lime) in a high-powered blender.

2. Salt the rim of a margarita glass.

3. Pour into a glass, squeeze lime juice into the drink and garnish with lime slices.

4. Enjoy in moderation.

  1. Can you use canned pineapple, if so would one 20oz can be the right amount? If not, when you say 1 pineapple cut into chunks, do you really use a full pineapple?

    1. Canned should work just fine. We used a full pineapple, I made the recipe for a crowd. You can scale it down if you aren’t serving a bunch of people. It makes a pitcher full.

  2. Wish I would of read comments before I made these. I put the whole tablespoon of salt in Because recipe says to put all ingredients in blender except salt..
    They were not good….. Guess I better try it again..
