Healthy Strawberry Poppyseed Dressing
A deliciously different salad dressing, boasting fresh, sweet flavors. Perfect served over a salad featuring a salty cheese (or even crumbled blue cheese).
In this recipe, we use a food processor, but you don’t need to make this in a food processor, instead, you can simply whisk it all together in a little bowl, adding the olive oil in a steady stream while emulsifying, much the same way you would make a mayonnaise.
The macros are calculated that one serving is approximately two tablespoons, and this recipe below will yield enough dressing for a very large salad serving 6-8 people.
Healthy Strawberry Poppyseed Dressing

Ingredients
- ¼ cup strawberry vinegar
- ½ tsp onion powder
- ¼ tsp ground ginger
- Generous pinch sea salt
- ¼ cup Swerve confectioners’ sweetener
- 1/3 cup light olive oil
- ½ tsp poppy seeds
Instructions
1. Place the strawberry vinegar, onion powder, ground ginger, salt, and Swerve confectioners sweetener into a small blender or food processor, you can also use an immersion blender. Blend well until combined.
2. Adding a little at a time (the same as you would make a mayonnaise), drizzle the olive oil, and blend until emulsified between each addition.
3. Stir in the poppy seeds and transfer the dressing to your serving container, or simply dress your salad leaves just before serving.
