When I was attending the Institute of Integrative Nutrition in New York City, I would eat cheesy grits from Whole Foods every morning before class. It was an obsession!
So naturally, I had to come up with my own version to enjoy at home. A hearty bowl of goodness, my version is enhanced with a slight hint of smoked paprika – and if you are feeling brave, some additional sliced chili garnishes will give it an extra kick! If you choose to skip the chilies, scatter over freshly chopped herbs to add a fresh flavor, more add some shredded cheese to melt nicely on top.
Healthier Cheesy Grits
A cheesy, savory, hot breakfast to start the day off right.
Ingredients
- 28 oz chicken bone broth
- 7 oz organic grits
- 3.5 oz full-fat milk
- 5.6 oz extra strong mature Cheddar cheese, grated
- Sea salt and freshly ground black pepper
- Pinch smoked paprika
- Finely sliced chilies (optional)
Instructions
- Bring the chicken bone broth to a simmer in a large pan and add the grits, stirring until it has cooked through, approx. 15-20 minutes.
- Stir in the milk for added creaminess and add all the grated cheese. Stir well until the cheese melts the consistency.
- Season with salt and freshly ground black pepper and divide between four warm bowls. Add a pinch of smoked paprika over each bowl and garnish with chilies for an extra kick!
Notes
You can also make your own homemade bone broth.
You could use polenta as a substitute for grits (as I did in my pics), but you may need to adjust your cooking times slightly, as it won’t require that much time in the pan to cook through sufficiently.
