Smoked Salmon Avocado Salad
This is a super easy, super simple salad that will always deliver on flavor! All the elements just work beautifully together – and it requires virtually no cooking (aside from toasting the nuts which is essential for maximum flavor).
Chef Tips:
- Baby plum tomatoes are a good substitute for cherry tomatoes.
- Fresh mozzarella is great in a salad, but if you can, try it with burrata for an oozy salad.
- Don’t skip the toasted pine nuts or the basil garnish: the flavors they offer bring the whole salad together.

Smoked Salmon Avocado Salad
When you need a filling and satisfying quick lunch or light dinner, try this delicious smoke salmon and avocado salad. It’s so refreshing and hearty.
Equipment
Ingredients
- 0.4 oz pine nuts
- 2.1 oz arugula
- 1 TB olive oil
- 2 tsp lemon juice
- 1 avocado diced
- 3.5 oz cherry tomatoes halved
- 3.5 oz fresh mozzarella drained and torn
- 5.3 oz cold-smoked salmon we use Butcher Box meat
- Sea salt
- Freshly ground black pepper
- Small handful basil leaves sliced
Instructions
- Toast the pine nuts in a dry pan over medium-high heat until golden. Set aside.
- Dress the arugula in the olive oil and lemon juice and divide between two plates.
- Top with the avocado, tomatoes, torn mozzarella, and smoked salmon. Season with salt and plenty of freshly ground black pepper.
- Finish with a sprinkling of basil and enjoy!
