When you need a filling and satisfying quick lunch or light dinner, try this delicious smoke salmon and avocado salad. It’s so refreshing and hearty.
Ingredients
- 0.4 oz pine nuts
- 2.1 oz arugula
- 1 TB olive oil
- 2 tsp lemon juice
- 1 avocado, diced
- 3.5 oz cherry tomatoes, halved
- 3.5 oz fresh mozzarella, drained and torn
- 5.3 oz cold-smoked salmon (we use Butcher Box meat)
- Sea salt
- Freshly ground black pepper
- Small handful basil leaves, sliced
Instructions
- Toast the pine nuts in a dry pan over medium-high heat until golden. Set aside.
- Dress the arugula in the olive oil and lemon juice and divide between two plates.
- Top with the avocado, tomatoes, torn mozzarella, and smoked salmon. Season with salt and plenty of freshly ground black pepper.
- Finish with a sprinkling of basil and enjoy!
