Okay so I can’t take full credit for this recipe. The truth is my Mom made it and brought us a large mason jar full of it one day. She called it chili, so I naturally assumed that my kids would say “it’s too spicy” and reserved it for my husband and I that night for dinner. I made something else for the kiddos. My daughter decided that she needed to taste what Grandma had made and to my astonishment not only did she like it but she ate my husbands entire bowl! Both of my kids loved it! Some days my kids just decide that they do not want to eat anything that I make. Isn’t that wonderful? What’s a Mom to do?! I’m sure not going to resort to feeding them junk just to make them happy. I have learned to be tricky over the years and have been developing recipes that appear to be junk food to the kids, but are in fact healthy. Baked sweet potato tots are definitely one of my favorites, I always have them on hand! Easy to make, inexpensive, and they keep well in the freezer.

Let me just start by saying that I have always been terrible at making hash browns! They always came out soggy. So I just admitted defeat and decided to stop trying. Once we started eating Paleo I wanted desperately to make sweet potato hash browns. While we avoid eating white potatoes, we definitely include sweet potatoes into our regular rotation.
White potatoes contain anti-nutrients like saponins that can be harmful, while sweet potatoes don’t contain those substances. I tried every method out there and failed most of the time, but then I had an idea: first fry, then broil. It worked! Plus, it’s super easy!!!
