In a large bowl, combine ground chicken, diced apple, onion, olive oil, sage, thyme, garlic powder, salt, pepper, cinnamon, and maple syrup. Mix gently until just combined. Avoid overmixing to keep the sausage tender.
Divide the mixture and form into small patties, about 2 to 3 inches wide.
Heat a skillet over medium heat and lightly grease it if needed. Cook the patties for about 5 to 6 minutes per side, or until fully cooked through and golden brown on the outside.
Remove from heat and let rest for a couple of minutes before serving.
