  • In a large bowl, combine ground chicken, diced apple, onion, olive oil, sage, thyme, garlic powder, salt, pepper, cinnamon, and maple syrup.
  • Mix gently until just combined. Avoid overmixing to keep the sausage tender.
  • Divide the mixture and form into small patties, about 2 to 3 inches wide.
  • Heat a skillet over medium heat and lightly grease it if needed.
  • Cook the patties for about 5 to 6 minutes per side, or until fully cooked through and golden brown on the outside.
  • Remove from heat and let rest for a couple of minutes before serving.
