Small handful basil leaves

Instructions
Toast the pine nuts in a
dry pan
over medium-high heat until golden. Set aside.
Dress the arugula in the olive oil and lemon juice and divide between two plates.
Top with the avocado, tomatoes, torn mozzarella, and smoked salmon. Season with salt and plenty of freshly ground black pepper.
Finish with a sprinkling of basil and enjoy!
