Then cut them into french fry sticks using this handy tool (definitely one of my favorite fun kitchen gadgets, and impulse kitchen tool purchases!).
You can also hand slice them into sticks, but it takes quite a bit longer.
Place them in a large bowl and cover with cold water, I add ice — this removes extra starch and makes them even crispier.
Allow them to soak, 2 to 3 hours (I have even been known to allow them to soak overnight when I accidentally ran out of coconut oil to fry them in!).
Drain the fries and dry them on a kitchen towel.
Heat the coconut oil over medium heat in a large skillet (you will want a skillet that is deep) until you have about 1/4″ of coconut oil in the pan.
If you want to have ultimate temperature control you can use a kitchen thermometer and heat the oil to 300°F.
I test the oil by dropping in a small fry and if it really sizzles then you are ready.
Drop enough fries into the pan (be very careful of oil splattering on you) so that you evenly cover the bottom, not too much so that they pile on top of each other.
Cook them for about 5 minutes, turning them with a spatula once.
