  • Preheat the oven to 400°F (180°C).
  • Combine the flour, sweetener, baking powder, pumpkin spice mix, and salt in a medium bowl.
  • In a smaller bowl, whisk together the melted (slightly cooled) butter, eggs, and vanilla extract.
  • Pour the egg mixture into the dry mix and use a hand mixer to mix the mixture to a thick batter.
  • Grease and dust the Madeleine tray, then use two teaspoons to fill the little holes in the Madeleine tray. 
  • Bake on the middle rack for 9-10 minutes.
  • Gently remove and leave on a cooling rack to cool before dusting with a little Swerve® confectioners’ sweetener.
