Instructions
Preheat oven to 350*F.
In a
high-powered blender
, puree bananas, dates, raisins, coconut oil, and vanilla until smooth.
In a large
mixing bowl
, combine all the rest of the ingredients.
Pour blended mixture into dry ingredients and stir well with a spoon, making sure to scrape the bottom of the bowl to get everything well mixed.
Using a cookie
scoop
, scoop the dough uniformly onto a
Silpat
lined baking sheet, about 12 cookies per sheet if you use one

.
Bake 10-12 minutes or until nice and brown but still chewy. These also freeze well.
