The fun part about making these healthy cookies is that each time you can add something new: dried fruit, protein powder, coconut butter, coconut chips, dehydrated nuts, and seeds, etc. Get creative with these little buggers!

  • Preheat oven to 350*F.
  • In a high-powered blender, puree bananas, dates, raisins, coconut oil, and vanilla until smooth.
  • In a large mixing bowl, combine all the rest of the ingredients.
  • Pour blended mixture into dry ingredients and stir well with a spoon, making sure to scrape the bottom of the bowl to get everything well mixed.
  • Using a cookie scoop, scoop the dough uniformly onto a Silpat lined baking sheet, about 12 cookies per sheet if you use one this size.
  • Bake 10-12 minutes or until nice and brown but still chewy. These also freeze well.
