Who needs potatoes when you can choose a healthier option with cauliflower? This cheesy dill cauliflower bake is easy to make and takes about 40 minutes from start to finish. This bake is creamy, tender, and full of flavor. You could also add bacon and minced chives to boost the flavor profile.
Bring a large saucepan of water to a boil and add the cauliflower. Cook for around 15 minutes, then drain in a colander.
Leave to steam off for 2-3 minutes, then season with salt and pepper. Transfer to bowl.
Add the garlic powder, yogurt, mayonnaise, mustard, and most of the chopped dill to the same bowl. Mix well to combine, then pour into a suitably sized baking dish.
Bake in the oven for 20 minutes and serve garnished with the remaining fresh dill.
