Looking to add more protein to your diet? Then this Asian-inspired, sticky and sweet chicken dish will make your mouth water. It’ll taste like you spent all day in the kitchen but only takes less than an hour to make!
Place the chicken pieces into a large bowl and season with salt and pepper.
Whisk the honey, tamari, and olive oil together in a bowl. Pour it over the chicken massage the mixture into the chicken.
Place the pieces side-up on the baking tray, ensuring all the mixture in the bowl is drizzled over the chicken in the tray.
Bake in the oven until completely cooked through, approx. 30-35 minutes.
Meanwhile, bring a large saucepan of salted water to the boil. Add the broccoli and cook for 4-5 minutes until just done.
Drain in a colander, seasoning with salt and a little olive oil. Toss well to coat and set aside to keep warm.
Rehydrate the rice noodles according to the packet instructions. Usually, this just means placing the 4 nests into a large bowl and covering them with boiling hot water from the kettle, and leaving them until soft.
When the chicken is done and you are ready to serve, drain the rice noodles very well and divide between the bowls/plates.
Add the broccoli and the chicken pieces (2 thighs, 1 drumstick per person), then drizzle any tray juices from the chicken over the plates, particularly the noodles.
