  • 1. Line a muffin tin with 12 muffin liners and spray with coconut oil or non-stick cooking spray.
  • 2. In a medium bowl, stir all ingredients together for the chocolate layer until smooth.
  • 3. In another medium bowl, stir all ingredients together for the peanut butter layer until smooth and add a pinch of kosher salt.

  • 4. Scoop a heaping 1/2 tablespoon of the chocolate layer into each muffin cup.
  • 5. Repeat until you’ve filled around 12 cups. Tap the muffin tin on the counter until the layer is set evenly.
  • 6. Scoop a heaping 1/2 tablespoon of the peanut butter layer on top of the chocolate layer. Again, tap the muffin tin on the counter until the layer is set evenly.

  • 7. Place the muffin tin in the freezer for 30 minutes or until firm.
