Healthy Chocolate Covered Amazeballs

This recipe was created from random foods in my fridge and cabinet in a four-alarm treat emergency. After I made them up and we all gave them a try, the only word that came to mind was "amazeballs" because I was just amazed at how so few ingredients could make such a delicious treat!!!

  • 1. In a food processor, chop dates until they resemble crumbles.
  • 2. Transfer to mixing bowl and add sea salt and almond butter, start with 1/4 cup almond butter and add more until you have a paste that can be formed into balls.
  • 3. Roll into balls and place on a Silpat-lined baking sheet.
  • 4. Put the sheet into the freezer until they are firm.
  • 5. Melt chocolate in a double boiler.
  • 6. Using a toothpick, pierce the date balls and dip them into chocolate until well coated.
  • 7. Place back onto a baking sheet and put all of them back into the freezer until the chocolate hardens. Enjoy!
