Grain-Free German Potato Dumplings

Ingredients
6
medium organic russet potatoes
¾
cup
Otto's Cassava Flour
1
tsp
sea salt
3
pastured eggs
Instructions
Peel
and boil potatoes, allow them to cool.
Then
mash
them, grate them or rice them.
Add the eggs, flour and salt.
Mix well with your hands.
Form into dumplings with your hands.
Bring a
medium pot
of water to a boil.
Drop the dumplings into the water, one at a time (careful not to splash yourself with boiling water!).
Gently boil them for about 10 minutes.
You will know they are done when they are all floating in the water.
Using a
slotted spoon
, scoop the dumplings out of the water.
Put them into a serving bowl with a lid to keep them warm.
Serve with gravy or butter.
They can also be used as dumplings in soups.
I even put them into
vacuum bags
and freeze them for future batches of soup! The easiest way to do this is with a food vacuum sealer (see below).
