This delicious cheesy meatloaf is a great way to sneak extra veggies and more protein into your family's meals. It's so savory, tender, and delicious that they won't even know how good it is for them!
In a large bowl, combine all the ingredients, except the cheese and ketchup. Allow the mixture to rest for 10 minutes at room temperature to meld the flavors together.
Line a loaf pan or baking sheet with parchment paper. Transfer the meat mixture to the pan with your hands. Use half of the mixture, layer on the cheese, then top with the rest of the meat.
Spread the ketchup over the loaf and bake for 45 minutes, or until internal temperature reaches 165°F.
Remove the meatloaf from the pan and allow it to rest for 10 minutes before slicing into it. Enjoy!
