One of the most frequently asked questions that I get is: “What do you bring to work for lunch?”. As you may, or may not know, I am a nurse. Being a nurse is a very demanding job, which means that often times I either do not get a break during my shift or I have to eat at the computer while I chart. This has led me develop a system of food to bring along, with a heavy emphasis on portability. Many of my meals are transported in mason jars! Sometimes my co-workers think I am odd….but hey, it keeps my from buying over-priced cafeteria junk or *gasp* McDonalds! Yes, there is a McDonalds in the hospital where I work (but that’s another whole blog post in itself!). I hope you find some of my ideas useful!
Today in my lunch:
- Bacon and Brussel Slaw Salad —Â recipe
- Detox Salad —Â recipe
- 4 pastured hard-boiled eggs*
- 1 avocado*
- 2 homemade kombucha’s —Â recipe
- 1 beet/dandelion green/carrot smoothie, an easy way to drink your vegetables in a hurry!
- 1 lemon, to use in my tea
*Note: In a pinch I make a quick egg salad using the avocado, two eggs, sea salt, and mustard. I can eat it right out of a cup while charting away and it keeps me full for hours. Great source of healthy fats and protein!

Great idea Kate. Love the Brussels Slaw salad although I am always hesitant to eat onions at work because of the strong smell. And Avocado and egg Salad. How interesting.
Isn’t it funny, that hospital cafeteria food choices are still bad, when they are supposed to get people healthy? Kaiser I think is the only exception with great choices of healthy food. I was certainly impressed on a recent visit.
