My kids love finger food and they especially love finger food that they can help make! This is a very kid-friendly recipe. They can form the nuggets and roll them in the almond flour. We already make fish nuggets regularly, and one day when we ran out of salmon, I decided to try it with some bacon I had on hand. Brilliant! Bacon nuggets are now one of our regular favorites. I make a huge batch and freeze them.

Yield: Makes about 12 nuggets

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

Ingredients

Instructions

    1. Cook bacon in a skillet, do not overcook it. You want it cooked about 3/4 of the way…not crispy!
    2. Keep bacon grease in the pan, you will use it again later.
    3. Put cooked bacon into a food processor and pulse until it becomes bacon crumbles.

    4. In a large bowl add bacon, eggs, garlic, paprika, 1/3 cup almond flour, and cheese.
    5. Mix well.
    6. Using your hands, form into nugget shapes.
    7. Roll in the additional almond flour.

    8. Fry in the skillet with reserved bacon grease, about 2 minutes each side.
    9. Let cool on a plate with paper towels, to soak up excess grease.
    10. You can freeze them in a freezer bag.

      A kid favorite!
    11. Serve with BBQ Sauce or Blue Cheese Dressing.
    12. These disappear super fast so I usually double or triple the batch.

  2. Those nuggets sound so great! I love the idea of freezing them and having them handy for quick meals. Have you ever frozen them before frying? I have one kid who is hyper picky and doesn’t like reheated foods. I am thinking that if I froze them and cooked them off for each meal they would seem fresh to him. Got to try that!

    1. I think you could certainly freeze them before frying! Give it a try and let me know how they turn out. As for the raffle, contact Kelly from “A Girl Worth Saving” — she set up the entrance form and might know a way around that.

    I have never heard of ends and pieces regarding bacon, though, only canned mushrooms!!! Interesting!
